CB Richard Ellis is a pre-eminent worldwide provider of real estate services and have full responsibility for the management of facilities on behalf of McGraw-Hill at Canary Wharf. They are responsible for over 15,000 properties within the UK with a total value of over £50 billion.

Over 700 on-site staff utilise a staff restaurant service, together with extensive vending and hospitality operations.

Scope of Works:

Catering Consultancy Bureau were commissioned by CBRE to review the subcontracted catering operations at McGraw-Hill’s prestigious Canary Wharf offices. The project encompassed benchmarking the incumbent caterer’s current service standards and purchasing arrangements, reviewing the labour establishment and hospitality and suggesting recommendations for improving gross profit margins and how to adopt a more commercial approach.

Outcome of Project:

•	Significant financial efficiencies identified following an operational audit.
•	Improved hospitality arrangements.
•	Increased gross profit margin, via various changes in service structure, operational procedures and purchasing arrangements.
•	Better utilisation of labour resources identified, allowing for significant overhead reductions.
•	Enhanced commercialism via a number of retail and point-of-sale concepts, increasing spend-per-head.
